Pumpkin Bread (Kathryn)
3 cups all purpose flour
2 cups sugar
2 teaspoons baking soda
2 teaspoons pumpkin pie spice
1 teaspoon salt
1/2 teaspoon baking powder
2 cups pumpkin puree (from a can)
2/3 cups vegetable oil
3 eggs beaten
1/2 cup chopped pecans (optional)
Preheat oven to 350 degrees. Mix together all dry ingredients. Then add pumpkin, oil, and eggs and mix well. Add in pecans blend well. Pour batter into 2 loaf pans and bake for 1 hour or until a toothpick inserted into bread comes out clean. Enjoy!!!
